Note:  Did you know cheese labeled "raw" is cheese that has not been pasteurized.  While pasteurization is supposed to kill germs, it also kills good stuff in the food.  I believe the "raw" theory is that the cheese making process can kill the bad stuff anyway.

Processed cheeses are the real killers. They are very high in sodium. Velveeta has about 400 mg of sodium in a one ounce serving. Kraft American cheese singles have almost 500 mg & processed Swiss cheese varies from about 200 to 400 mg of sodium depending on brand.
Real cheeses are much better for you. Cheddar has about 180 mg of sodium while Swiss cheese runs from 40 to 60 mg, again varying on brand name. I happen to love Swiss cheese so that's what I get all the time.
I refuse to be victimized by notions of virtuous behavior.
