A theory does not mean that something does not exist. I use the following because it best put in words that are hard for me myself to explain.

A theory not only explains known facts; it also allows scientists to make predictions of what they should observe if a theory is true. Scientific theories are testable.

The theory of relativity does not mean that it does not exist. It is testable and pretty much all of Einstein's theories have been tested and found to be correct. Still makes it a theory.

Evolution is a theory that is based on testable facts. We know from DNA that living things evolve. We do not know everything about evolution or where we come from but the theory provides facts we can test. Just because we don't know everything doesn't mean it's not real. We have enough data to use critical thinking and see that what we do know is a good start.
